It appears as colorless crystals or a white crystalline powder with a slightly salty taste. It possesses good buffering, chelating, and antioxidant properties. Sodium citrate is a commonly used chemical raw material produced by the neutralization reaction of citric acid and is widely used in food, pharmaceuticals, chemicals, water treatment, and daily chemical products.
